Green Bean Salad

Ingredients:

  • 1 1/2 teaspoons Kosher salt
  • 1 1/2 pounds thin green beans, trimmed
  • 1 pint grape or cherry tomatoes
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 3/4 teaspoon black pepper
  • 1 cup crumbled feta cheese
  • 1/4 cup mint leaves

Instructions:

  • Fill a large bowl with ice water
  • Bring a salted pot of water to a boil
  • Add green beans and cook for 3 minutes or until crisp tender
  • Drain the green beans
  • Immediately place beans in ice water
  • Drain and pat dry with paper towel
  • Add green beans to a mixing bowl with the tomatoes
  • Whisk together olive oil, vinegar, salt and pepper
  • Pour over green beans and tomatoes
  • Toss to coat
  • Cover and refrigerate at least an hour
  • When serving, add the feta and mint
  • Toss to coat
